A story that is about the wine itself; the grapes, the terroir, where it comes from, when it was harvested, how it was handled, when it was bottled?
The selection; where it was purchased, when it was brought home, who were you with when you bought it, was it the first time tasting it, what was the occasion for the tasting, what was the day like, how long you have patiently kept it safe and how great was the effort to keep it for that period of time?
The more significant part of the story is why you finally chose to pull it out of your collection. What’s the occasion; just because, or is it special? Who are you sharing it with? What are you pairing it with? What is the setting; daytime, evening, morning? What are you feeling?

The Journey
From the very first sign of life in the spring vineyard, we patiently watch, hope, plan and anticipate the busiest time of year at the wineries. The culmination of hard work, luck, tasting, measuring, monitoring and a lot more hard work, we finally decide to clip the fruit away from its vine. Luscious, colourful and full of flavour we bring the grapes in from the vineyards and into the crushpad.
Although winemaking has been around for 1000’s of years, the art continues to evolve and the results continue to surprise us. By using aged old traditions, recipes and equipment, todays winemakers push their limits and strive to give us unique and even more desirable results. Consumers today are more knowledgable and sophisticated than ever before. This increased attention inspires winemakers to experiment and apply new processes and technologies to deliver award winning wines.
We have made our selections and bring home our favourite wines. The wineries where we bought these wines have invested a significant effort into keeping the wine in a very controlled environment for many months. So, unless we are going to consume this wine immediately, where do we put it? We need to find a place that is; not too warm, not too cool, not too humid, not too dry, not to lighted,…………. we are looking for a place that is just right……..! A place that will allow your wine to gently rest and age quietly. Did anyone tell us that this is going to be one of the most difficult parts of wine keeping? It is very tempting to consume the wine, but if you can be patient, the results will be worth waiting for.
