Cava is a Spanish sparkling wine, produced mainly in the Catalonia region. It can be either white or rose and is often made from Macabeo, Parellada and Xarello grapes. However, Chardonnay, Pinot Noir, Trepat Garnacha and Monastell grapes are also used to make certain Cava.

Cava is not just any sparkling, it is a traditionally made sparkling, requiring similar care to Champagne and other sought after sparkling. This traditional method produces a richer, more complex sparkling with flavours of zesty citrus, minerality and nuttiness, with soft/fine bubbles giving of a creaminess with every sip.

This thin skinned, dark purple grape, produces bright magenta colour at the rim and transitions to an opaque purple in the glass. A full body, medium tannin red gives off aromas and flavours of red fruit; plum, black cherry, raspberry, blackberry, and blueberry, together with tobacco, chocolate, spice and vanilla.

Depending on the region from where the Malbec comes from, one will get a bit of a different flavour profile. From Argentina, one would expect a very fruit forward, bold wine with a sweet tobacco finish. From France, the Malbec will deliver currant and black plum flavours which are a bit more tart. Due to higher acidity, French Malbec tends to have flavours of black pepper and spice, with a “greener” undertone.
